Cappelletti with Truffle Oil
Serves 6
Ingredients:
- 1 lb. 5 oz. cappelletti*
- white truffle oil, to taste
- 3 1/2 oz grated Parmesan cheese
- Salt, to taste
Procedure:
Cook the cappelletti in plenty of salted water. Drain and arrange on a deep serving dish.
Add the olive oil infused with white truffles as desired and the grated Parmesan cheese.

*Cappelletti are small, stuffed squares of pasta, similar to ravioli. They get their name from the Italian word cappelletto, which means little hat.
