Potage of Sausage & Lentils with Artichokes
(Serves 8)
Ingredients:
- 1-1/2 lbs.Smoked Sausage, sliced 1/2 inch thick
- 1 Tbs.Butter
- 1 Large Sweet Onion, chopped
- 2 cups Dried Lentils
- 3 cups vegetarian stock*
- 2 Dried Bay Leaves
- 8 Marinated quartered Artichoke Hearts, liquid retained
- 1 Head Chicory or Escarole or other leafy lettuce, cleaned and chopped
*We recommend trying 1-1/2 oz. Veggie Stock Gold reconstituted in 3 cups hot water.
Preparation
Heat a large sauté pan over medium high heat. Add butter and sauté onion.
Add sausage to sautéed onion. When sausage is browned, stir in the lentils, vegetarian stock and bay leaves; bring to a boil.
Reduce heat to low, cover and simmer 25 minutes, or until lentils are tender and water is absorbed. Remove from heat; remove bay leaves.
Stir in the artichoke hearts with the marinade and chicory or other greens. Mix thoroughly and serve.
