About the Italian Culinary Academy

The Italian Culinary Academy was designed and is overseen by Master Chef Cesare Casella who is the Dean of Italian Studies as well as a restaurant owner and author of books such as Diary of a Tuscan Chef.

Culinary Arts Student New YorkThe International Culinary Center itself is also home to the French Culinary Institute and offers classes in wine studies, restaurant management, food writing, and more.

About the Italian Culinary Experience

The Italian Culinary Experience is a Total Immersion program that teaches Italian cooking and culture from the inside out. Students begin the program with an intense week of Italian language in New York. After nine weeks of study, students travel to ALMA in Parma, Italy for another nine weeks of study under Italian chefs.

This is followed by an internship in a top restaurant in Italy. Students learn not only how to prepare authentic Italian food, but they also learn firsthand the language and culture behind the cuisine.

Accreditation

The International Culinary Center has been accredited by the Accrediting Commission of Career Schools and Colleges of Technology.

Financial Aid

The majority of students at the Italian Culinary Academy receive some form of financial aid. The school has financial aid advisors that confer with prospective students to help them create the financial aid package that works best for their needs.

Generally, most students qualify for some combination of grants, loans, and scholarships. Each has different criteria for approval, so students should consider their financial needs and their skills, interests, and academic performance to determine the best route to take.

Faculty

The International Culinary Center relies on its Total Immersion programs to give students the best training in the least amount of time. This is supported by one of the lowest student-to-faculty ratios in the business. The Italian Culinary Academy is led by Chef Cesare Casella, Dean of Italian Studies. The Italian portion of the program is overseen by Chef Gualtiero Marchesi who is Italy’s first Michelin three-star chef. These men and the other chef-instructors bring vast knowledge to their roles and their students.

Facilities

Facilities at the school include new, modern kitchens, including a custom Italian kitchen with a brick-lined pizza oven and Italian-marbled chef’s station. There is an International Culinary Theatre where guest chefs can demonstrate new cooking techniques. The school is also home to a large library, and there are lounges for the students. Studies in Italy take place at Alma, the International School of Italian Cuisine, which is located inside a palace in the countryside outside of Parma.

Upon completion of this portion of the program, they have the opportunity to apprentice in one of many excellent restaurants in Italy. Both legs of this journey give students the opportunity to truly become immersed in new cultures and experiences.
