Golden Chutney Sauce
Servings: 4
Ingredients:
- 1/4 cup finely chopped shallots
- 1 oz. Butter (1/4 stick)
- 1/2 cup white wine (Use a good table wine)
- 1 cup vegetarian demi-glace*
- 2-3 tablespoons of Old Farmhouse Chutney
- Salt and Pepper to taste
We recommend trying 1 1/2 oz of Veggie Glace Gold reconstituted in 1 cup hot water.
Procedure
- Melt butter in a sauce pan and sauté shallots for approx. 2 minutes (until transparent).
- Add wine and reduce to an essence (approx. 2-3 minutes).
- Add vegetarian demi glace and stir with a whisk and simmer for approx. 5-6 minutes (until sauce has thickened).
- Add Old Farmhouse Chutney.
Sauce can be served over sautéed chicken breasts, portabello mushrooms, or assorted grilled vegetables.
